Rainbow salad sandwich with apple and yogurt
- 1 rainbow salad sandwich
- 1 apple
- 6 oz. low fat or fat free yogurt
Rainbow salad sandwich
- 2 slices whole wheat bread
- 1 tsp. lemon juice
- I small ripe avocado, peeled and seed removed
- 1 romaine lettuce leaf
- 1 small carrot, peeled and grated
- 4 slices tomato
- Small handful of snow peas or alfalfa sprouts
Place avocado in a bowl and mash with a fork until smooth. Spread bread with avocado mixture. On one piece of bread, layer lettuce, carrot, tomato and snow peas or alfalfa sprouts. Top with second piece of bread.
Makes 1 sandwich
